You need a pan (or two), preferably non- stick

*Step 1*: toast all the buns in a large pan. ( both Burger buns and sour dough each slice on both sides).

*Step2*: Clean the pan from bread residuals and start with the Brisket.

*Step3*: Break apart the meat and place it in the pan with the butter and stock. Stir until full harmony, then remove.

Step 4: spread the breads on the counter then the Japanese Mayo on the bread.

Step5: Place the other ingredients in the following sequence. *Brisket > hoisin sauce > pickled radish > pickled carrots > corriander. *

Cover the second bread with mayo and close.

✅ Done.

*Step 6*: Use a napkin or a wet cloth to clean the pan and add some 1 tbsp of veg oil under medium heat.

*Step 7*:

While waiting for the oil to heat press the patty to a 1cm thickness, cover the whole surface of the burger patty with the spice mix and place it in the pan, seasoned side down.

*Step 8*: Season the second side of the patty and head to the buns to prepare them in the meantime.

*Step 9*: Spread the ingredients in the following sequence in the meantime : Sauce > iceberg > tomato. (That should take around 3 minutes. Move your hands chef!)

*step 10* Flip the patty and add the cheddar cheese on top while it’s still in the pan.

*Step 11* spread the sauce on the upper half of the buns while waiting for the cheddar to melt.

*Step 12* when it’s done place the patty on the lower side then add pickles and close.
